Caramelized Banana Protein Pancakes by Cooking With Books

No need to hit the snooze button for these delicious high protein pancakes. We think Marnely Murray, blogger for ‘Cooking With Books,‘ has created the perfect weekend breakfast recipe using our ProYo Banana Vanilla flavor as a ‘secret’ ingredient in these magical, high-protein, homemade flapjacks. Drizzle with the caramelized banana syrup and you will be in a sweet mood all day long!

Here is the recipe:

Ingredients: 

For the pancakes:

  • 2 large eggs
  • 2, 4-ounce Banana Vanilla ProYo High Protein Frozen Yogurt, thawed under warm water
  • 1 ripe banana, chopped
  • 1 tablespoon vanilla extract
  • 1 teaspoon cinnamon
  • 2 tablespoons brown sugar
  • 1 cup flour
  • 2 teaspoons baking powder
  • pinch of salt
For the topping:
  • 3 tablespoons unsalted butter
  • 4 tablespoons brown sugar
  • 1 teaspoon cinnamon
  • 2 ripe bananas, sliced
  • 1 vanilla bean

Instructions: 

  1. In a blender, mix eggs, ProYo Banana Vanilla High Protein Frozen Yogurt, banana, vanilla, cinnamon and brown sugar for one minute. Add the flour, baking powder, and salt. Blend until smooth. Set aside, while you make the topping.
  2. In a sauté pan over medium heat, melt the butter and add the sugar and cinnamon, stirring until sugar dissolves. Add bananas and vanilla bean, and let cook for 5 minutes.
  3. Make pancakes per usual, although these take a little longer than regular pancakes on each side (about 4-5 minutes). Cook to golden brown, drizzle with warm syrup topping and enjoy!
